Preparation Steps
- Preheat your oven to 180°C (350°F) and line a square baking dish (approx. 9x9 inches) with baking paper.
- Grate the zucchini and carrot into a colander, sprinkle with salt, and let sit for 10 minutes to drain excess moisture.
- In a frying pan, heat 1 tablespoon of olive oil over medium heat and sauté diced onion and bacon until golden and crisp for 5-7 minutes.
- Squeeze any remaining moisture from the drained zucchini and carrot, combine with red capsicum, sautéed onion and bacon, grated cheese, and self-raising flour in a mixing bowl.
- Add whisked eggs, milk, and remaining olive oil to the mixture, then season with salt and pepper. Mix until well combined.
- Pour the mixture into the prepared baking dish, smooth the top, and sprinkle with reserved grated cheese before baking for 35-40 minutes until golden.
- Once baked, let cool for a few minutes before slicing into squares. Serve warm or chilled.
