  • 1 can Rotel (Diced Tomatoes with Green Chilies) or canned diced tomatoes
  • 2 cups Shredded Cheddar Cheese Monterey Jack or Mexican blend are good substitutes
  • 2 cups Crushed Doritos or Corn Chips (Fritos) any sturdy tortilla chip works
Optional Toppings
  • 0.5 cup Sour Cream
  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes fresh or canned
  • 0.25 cup Green Onions
  • 0.25 cup Cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, add ground beef and diced onion; cook until browned and onions are translucent.
  3. Stir in taco seasoning and water, letting the mixture simmer for 2-3 minutes.
  4. Add chili beans and Rotel to the beef mixture, and simmer for another 2-3 minutes.
  5. Spread half of the crushed chips in the baking dish, pour the beef mixture over it, then top with the remaining cheese.
  6. Bake uncovered for 15-20 minutes until cheese is melted and bubbly.
  7. Top with remaining crushed chips and desired toppings before serving.
