- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large skillet over medium heat, add ground beef and diced onion; cook until browned and onions are translucent.
- Stir in taco seasoning and water, letting the mixture simmer for 2-3 minutes.
- Add chili beans and Rotel to the beef mixture, and simmer for another 2-3 minutes.
- Spread half of the crushed chips in the baking dish, pour the beef mixture over it, then top with the remaining cheese.
- Bake uncovered for 15-20 minutes until cheese is melted and bubbly.
- Top with remaining crushed chips and desired toppings before serving.
