Method
 

Baking Instructions
  1. Preheat your oven to 200°C (fan 180°C/gas 6) and prepare baking sheets by lining them with parchment paper.
  2. In a large mixing bowl, combine the plain flour, bicarbonate of soda, ground ginger, and ground cinnamon.
  3. Melt together the butter, soft dark brown sugar, golden syrup, and black treacle in a saucepan over low heat.
  4. Pour the melted mixture into the dry ingredients and mix until a dough forms.
  5. Roll out the dough to approximately ½ cm thick and cut out cookie shapes using a gingerbread man cutter.
  6. Bake in the preheated oven for 12-14 minutes or until golden brown.
  7. Cool on a wire rack before decorating.
  8. Prepare royal icing by mixing powdered sugar with water until it's paste-like, and add food coloring if desired.
  9. Decorate the cooled cookies with royal icing and let the icing set fully before serving.
