- In a blender, combine Greek yogurt, juice and zest of limes, chopped cilantro, optional jalapeño, garlic powder, and salt. Blend until smooth and creamy. Refrigerate for 10 minutes.
- In a mixing bowl, toss the shrimp with olive oil, chili powder, garlic powder, ground cumin, chipotle chili powder, and salt. Marinate for 15 minutes.
- Mix shredded cabbage with 3 tablespoons of the garlic lime sauce in a bowl. Chill until ready to assemble.
- Warm tortillas in a skillet for 30 seconds on each side or char over an open flame.
- In the same skillet, heat olive oil and cook the shrimp for about 4 minutes until pink and opaque.
- Assemble tacos with tortillas, cabbage slaw, shrimp, avocado, onion, cotija cheese, and lime wedges.
