Ingredients
  

Garlic Lime Sauce
  • 1 cup Plain Greek Yogurt Use full-fat for the best texture.
  • 2 pieces Limes Juice and zest for maximum flavor.
  • 1/4 cup Cilantro Can substitute with parsley.
  • 1 small Jalapeño Adjust to taste for spiciness.
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt Enhances flavors.
Shrimp
  • 1 pound Large Shrimp Fresh or thawed frozen shrimp.
  • 1 tablespoon Olive Oil For cooking.
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chipotle Chili Powder For smokiness.
  • 1/2 teaspoon Salt
Tacos
  • 2 cups Shredded Cabbage Use green or red cabbage.
  • 8 pieces Corn or Flour Tortillas Corn tortillas for gluten-free.
  • 1 medium Avocado Sliced or diced.
  • 1/2 medium Red Onion Can be pickled.
  • 1/2 cup Cotija Cheese Can substitute with feta.

Method
 

Preparation
  1. In a blender, combine Greek yogurt, juice and zest of limes, chopped cilantro, optional jalapeño, garlic powder, and salt. Blend until smooth and creamy. Refrigerate for 10 minutes.
  2. In a mixing bowl, toss the shrimp with olive oil, chili powder, garlic powder, ground cumin, chipotle chili powder, and salt. Marinate for 15 minutes.
  3. Mix shredded cabbage with 3 tablespoons of the garlic lime sauce in a bowl. Chill until ready to assemble.
  4. Warm tortillas in a skillet for 30 seconds on each side or char over an open flame.
  5. In the same skillet, heat olive oil and cook the shrimp for about 4 minutes until pink and opaque.
  6. Assemble tacos with tortillas, cabbage slaw, shrimp, avocado, onion, cotija cheese, and lime wedges.
