- Bring a large pot of salted water to a boil. Cook the Barilla Penne until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
- Pat the salmon dry and season with salt and black pepper. Set aside.
- Heat olive oil in a skillet over medium heat. Cook salmon for 3-4 minutes on one side, flip and cook for an additional 2-3 minutes until cooked through. Let it rest.
- In the same skillet, sauté diced onions in residual oil until translucent. Add butter, garlic, and parsley, cooking for another 30 seconds.
- Flake 20% of the salmon into the skillet. Stir in milk and reserved pasta water gradually, mixing until creamy.
- Add grated parmesan until melted, stirring for a rich consistency.
- Combine the drained pasta and remaining salmon in the skillet, tossing to coat. Adjust sauce consistency with reserved pasta water if needed.
- Garnish with lemon zest, extra parmesan, and red pepper flakes. Serve warm.
