  • 1 cup Milk lukewarm to avoid curdling
  • 1/2 cup Parmesan Cheese freshly grated
  • 1/2 teaspoon Red Pepper Flakes for a gentle kick
  • 1 cup Pasta Water reserved before draining pasta

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Cook the Barilla Penne until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. Pat the salmon dry and season with salt and black pepper. Set aside.
  3. Heat olive oil in a skillet over medium heat. Cook salmon for 3-4 minutes on one side, flip and cook for an additional 2-3 minutes until cooked through. Let it rest.
  4. In the same skillet, sauté diced onions in residual oil until translucent. Add butter, garlic, and parsley, cooking for another 30 seconds.
  5. Flake 20% of the salmon into the skillet. Stir in milk and reserved pasta water gradually, mixing until creamy.
  6. Add grated parmesan until melted, stirring for a rich consistency.
  7. Combine the drained pasta and remaining salmon in the skillet, tossing to coat. Adjust sauce consistency with reserved pasta water if needed.
  8. Garnish with lemon zest, extra parmesan, and red pepper flakes. Serve warm.
