Preparation Steps
- In a saucepan, combine 1 cup of frozen raspberries, 2 tablespoons of water, and 1 tablespoon of chia seeds. Cook over low heat for about 10-15 minutes, stirring frequently, until the mixture thickens and becomes syrupy. Stir in 1 tablespoon of arrowroot powder to give it a glossy finish. Set aside to cool.
- In a mixing bowl, combine 1 cup of cocoa powder, 1 cup of oat flour, 1/4 cup of maple syrup, 1/2 cup of runny nut butter, 1/4 cup of almond milk, and 1 teaspoon of vanilla extract. Mix until smooth and thick.
- Flatten each medjool date slightly to create a base. Use a silicone mold or roll the brownie mixture into small balls.
- Place brownie bite on top of each flattened medjool date and top with a dollop of raspberry jam. Assemble on a tray.
- Transfer to the freezer for about 1 hour. Enjoy immediately or store in the fridge for up to one week.

Notes
Using a silicone mold ensures perfectly shaped bites. Allow sufficient time to chill for the best texture.
