Brownie Mixture
  • 1 cup Medjool dates Ensure they are pitted.
  • 1 cup Cocoa powder Use unsweetened.
  • 1/4 cup Maple syrup Adjust based on desired sweetness.
  • 1/2 cup Runny nut butter (e.g., almond butter) Can use sunbutter for nut-free option.
  • 1/4 cup Oat flour Use gluten-free flour if necessary.
  • 1/4 cup Almond milk Any plant-based milk works.
  • 1 teaspoon Vanilla extract
  • 1/2 cup Chocolate chips High-quality recommended.
  • 2 tablespoons Coconut oil Optional for a lighter version.

Method
 

Preparation Steps
  1. In a saucepan, combine 1 cup of frozen raspberries, 2 tablespoons of water, and 1 tablespoon of chia seeds. Cook over low heat for about 10-15 minutes, stirring frequently, until the mixture thickens and becomes syrupy. Stir in 1 tablespoon of arrowroot powder to give it a glossy finish. Set aside to cool.
  2. In a mixing bowl, combine 1 cup of cocoa powder, 1 cup of oat flour, 1/4 cup of maple syrup, 1/2 cup of runny nut butter, 1/4 cup of almond milk, and 1 teaspoon of vanilla extract. Mix until smooth and thick.
  3. Flatten each medjool date slightly to create a base. Use a silicone mold or roll the brownie mixture into small balls.
  4. Place brownie bite on top of each flattened medjool date and top with a dollop of raspberry jam. Assemble on a tray.
  5. Transfer to the freezer for about 1 hour. Enjoy immediately or store in the fridge for up to one week.
