Step-by-Step Instructions
  1. Blend the dried apricots and pumpkin puree in a food processor on medium until finely chopped and sticky, about 1-2 minutes.
  2. Add vanilla extract and macadamia nuts, blend until uniform but still crunchy, about 1-2 minutes.
  3. Scoop out about one teaspoon, roll into a ball, and place on a parchment-lined tray.
  4. Use a toothpick to make an indentation on top of each ball and place a sultana in the center as a stem.
  5. Refrigerate for at least 30 minutes to firm up, then serve or store in an airtight container.
