Method
 

Preparing the Cookies
  1. Preheat your oven to 375°F (190°C) and prepare baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, salt, and baking soda.
  3. In a large bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter-sugar mixture and mix until combined.
  5. Gradually mix in the dry ingredients, then fold in the chopped peaches and peach preserves.
  6. Drop rounded dollops of dough onto prepared baking sheets, leaving space between each scoop.
  7. Mix sanding sugar with ground cinnamon and sprinkle over the cookie dough.
  8. Bake for 11 to 13 minutes, or until edges are golden and centers are set.
  9. Allow cookies to cool on baking sheets for about 5 minutes before transferring to a wire rack.
