Prepare Pumpkin Spice Syrup
- In a small saucepan, combine equal parts sugar and filtered water over medium heat. Stir gently until the sugar dissolves, avoiding boiling. Add pumpkin puree and pumpkin pie spice, mixing well. Allow the mixture to cool for about 20 minutes.
Assemble Individual Servings
- Pour 1 ounce of the freshly made pumpkin syrup into a glass. Top it with 6 ounces of cold soda water. Add a generous dollop of whipped cream and finish with colorful Halloween sprinkles.
Create a Pitcher for Sharing
- Pour the cooled pumpkin syrup into a large pitcher and mix it with enough cold soda water for the desired number of guests. Serve immediately with ice and optional garnishes.
Adjust Sweetness as Desired
- If preferred, adjust the syrup-to-soda ratio for desired sweetness by adding more syrup.
