- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan with grease and parchment paper.
- Melt ¼ cup of white chocolate in the microwave in 20-second intervals, stirring until smooth.
- In a blender, combine cottage cheese, eggs (or egg whites), vanilla extract, lemon zest, lemon juice, and sweetener. Blend until smooth and creamy.
- Add baking powder, salt, and melted white chocolate to the mixture, blending until well incorporated.
- Transfer the mixture to a bowl and fold in almond flour or oat flour until smooth.
- Pour the batter into the prepared pan and sprinkle with chocolate chips or berries if desired.
- Bake for 22-25 minutes until edges are firm and center is slightly soft. A toothpick should come out with moist crumbs.
- Cool completely on a wire rack before chilling in the fridge for at least an hour before slicing.
