Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan with grease and parchment paper.
  2. Melt ¼ cup of white chocolate in the microwave in 20-second intervals, stirring until smooth.
  3. In a blender, combine cottage cheese, eggs (or egg whites), vanilla extract, lemon zest, lemon juice, and sweetener. Blend until smooth and creamy.
  4. Add baking powder, salt, and melted white chocolate to the mixture, blending until well incorporated.
  5. Transfer the mixture to a bowl and fold in almond flour or oat flour until smooth.
  6. Pour the batter into the prepared pan and sprinkle with chocolate chips or berries if desired.
  7. Bake for 22-25 minutes until edges are firm and center is slightly soft. A toothpick should come out with moist crumbs.
  8. Cool completely on a wire rack before chilling in the fridge for at least an hour before slicing.

Notes
