- In a mixing bowl, whisk together low-sodium soy sauce (or tamari), honey, sriracha, minced garlic, and water until well combined. Set aside a few tablespoons of the marinade for later use.
- Cut the salmon into 1-inch cubes and add to the marinade, gently tossing to coat. Allow to marinate for at least 20 minutes.
- Heat a non-stick skillet over medium-high heat, add a splash of oil, and cook the marinated salmon for 2-3 minutes on each side.
- Pour the reserved marinade into the skillet with the cooked salmon and allow it to bubble gently and thicken for 2-3 minutes.
- Prepare serving bowls with cooked white rice and top with the glazed salmon.
- Add toppings of sliced avocado, diced cucumber, and cooked edamame to the bowls.
- Mix mayonnaise with sriracha to create sriracha mayo and drizzle over each bowl. Serve warm.
