- In a mixing bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until combined.
 - Place chicken in a resealable bag, pour marinade over chicken, seal, and refrigerate for 30 minutes to 2 hours.
 - Rinse jasmine rice under cold water. In a saucepan, bring chicken broth to a boil. Add rice, cover, and simmer for 15 minutes.
 - Preheat grill or stovetop pan, remove chicken from marinade, and grill for about 6-7 minutes per side until cooked through.
 - In a bowl, combine diced avocado, red onion, cilantro, and olive oil. Toss until combined.
 - On each plate, layer rice, then sliced chicken, and top with the avocado mixture.
