Ingredients
  

For the Chicken Marinade
  • 4 pieces Boneless, skinless chicken breasts
  • 1/4 cup Honey or agave syrup for vegan
  • 1/4 cup Lime juice freshly squeezed
  • 1 teaspoon Lime zest avoid the pith
  • 2 cloves Garlic fresh minced
  • 1 teaspoon Ground cumin or smoked paprika
  • to taste Salt & Pepper
For the Rice
  • 1 cup Jasmine rice or basmati/long-grain rice
  • 2 cups Chicken broth or vegetable broth for vegetarian
For the Avocado Mixture
  • 2 pieces Avocado ripe
  • 1/4 cup Red onion finely chopped
  • 1/4 cup Cilantro chopped
  • 1 tablespoon Olive oil
To Serve
  • 2 pieces Lime wedges for garnish

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until combined.
  2. Place chicken in a resealable bag, pour marinade over chicken, seal, and refrigerate for 30 minutes to 2 hours.
  3. Rinse jasmine rice under cold water. In a saucepan, bring chicken broth to a boil. Add rice, cover, and simmer for 15 minutes.
  4. Preheat grill or stovetop pan, remove chicken from marinade, and grill for about 6-7 minutes per side until cooked through.
  5. In a bowl, combine diced avocado, red onion, cilantro, and olive oil. Toss until combined.
  6. On each plate, layer rice, then sliced chicken, and top with the avocado mixture.
  7. Serve with lime wedges on the side for added acidity.
