- Preheat your oven to 375°F (190°C). Arrange the all-butter croissants on baking parchment and gently roll them out until flattened to about ½ inch thick.
- Melt 1 tablespoon of unsalted butter in a non-stick frying pan over medium heat. Fry the flattened croissants for 2-3 minutes on each side until golden brown and crispy.
- After frying, drizzle with honey and sprinkle with golden caster sugar. Return to the pan, honey-side down, and caramelize for 5 minutes until golden and crisp.
- In a mixing bowl, whisk together mascarpone, icing sugar, vanilla bean paste, and ground mixed spice until smooth. Fold in the orange and brandy mincemeat.
- Spread the mascarpone and mincemeat filling on one half of a fried croissant, top with another half, and press down lightly. Cut the sandwich in half to serve warm.
