Method
 

Prepare and Mix
  1. Bring cream cheese or coconut butter and butter to room temperature (15-20 minutes). Gather remaining ingredients.
  2. In a bowl, combine cream cheese or coconut butter, butter, powdered sweetener, and instant coffee. Whip with a hand mixer for 2-3 minutes.
Form and Chill
  1. Transfer mixture to a shallow container and refrigerate for about 10 minutes until firm enough to handle. Form small balls (1 inch in diameter).
  2. Chill formed truffles in the refrigerator for at least 30 minutes.
Coat and Serve
  1. Melt chocolate chips in a microwave-safe bowl, adding coconut oil for a glossy finish. Dip each truffle in chocolate until coated.
  2. Once coated, let truffles set on parchment. Serve immediately or store in an airtight container.
