Prepare and Mix

- In a bowl, combine cream cheese or coconut butter, butter, powdered sweetener, and instant coffee. Whip with a hand mixer for 2-3 minutes.
Form and Chill
- Transfer mixture to a shallow container and refrigerate for about 10 minutes until firm enough to handle. Form small balls (1 inch in diameter).
- Chill formed truffles in the refrigerator for at least 30 minutes.
Coat and Serve
- Melt chocolate chips in a microwave-safe bowl, adding coconut oil for a glossy finish. Dip each truffle in chocolate until coated.
- Once coated, let truffles set on parchment. Serve immediately or store in an airtight container.
