  • 1 can Coconut milk Adds creaminess

  • 1 teaspoon Lime juice Fresh lime is best

  • 1 teaspoon Fresh ginger Grated for flavor

  • 2 cups Cooked rice Jasmine, basmati, or cauliflower rice work well

Cooking Steps
  1. In a large skillet, add 1 tablespoon of either vegetable or coconut oil and heat over medium-high heat.
  2. Add 1 pound of diced boneless, skinless chicken breasts to the skillet. Season generously with salt and pepper. Sauté for about 5 to 7 minutes until golden brown and cooked through.
  3. Once the chicken is cooked, stir in 2 minced garlic cloves and 1 teaspoon of freshly grated ginger. Continue to cook for an additional minute until fragrant.
  4. Pour in 1 can of coconut milk, 1 tablespoon of soy sauce, and the juice of 1 teaspoon of fresh lime. Allow it to simmer for about 5 to 7 minutes.
  5. While the sauce simmers, cook 2 cups of rice according to package instructions.
  6. Serve the creamy coconut chicken over a portion of the cooked rice and garnish with freshly chopped cilantro or sliced green onions.
