- Preheat your oven to 180°C (350°F).
- Melt 2 tablespoons of butter in your frying pan over medium heat. Add in the diced boneless, skinless chicken breast and sauté for about 7 minutes, turning occasionally until fully cooked.
- Stir in your cooked spinach and sauté for an additional 2 minutes.
- Reduce the heat to low and pour in the heavy cream, followed by the grated Parmesan cheese. Stir until the cheese melts.
- Lay your coconut flour crepes on a flat surface and spoon an ample amount of the chicken and spinach mixture along the center of each crepe. Roll them up tightly.
- Carefully transfer your rolled crepes into the buttered baking dish, seam side down.
- Sprinkle the remaining mozzarella cheese generously over the rolled crepes.
- Place the baking dish in the preheated oven and bake for about 15 minutes until the cheese is melted and bubbly.
