Method
 

Cooking Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Melt 2 tablespoons of butter in your frying pan over medium heat. Add in the diced boneless, skinless chicken breast and sauté for about 7 minutes, turning occasionally until fully cooked.
  3. Stir in your cooked spinach and sauté for an additional 2 minutes.
  4. Reduce the heat to low and pour in the heavy cream, followed by the grated Parmesan cheese. Stir until the cheese melts.
  5. Lay your coconut flour crepes on a flat surface and spoon an ample amount of the chicken and spinach mixture along the center of each crepe. Roll them up tightly.
  6. Carefully transfer your rolled crepes into the buttered baking dish, seam side down.
  7. Sprinkle the remaining mozzarella cheese generously over the rolled crepes.
  8. Place the baking dish in the preheated oven and bake for about 15 minutes until the cheese is melted and bubbly.
