Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.

  3. In a separate bowl, whisk together the Greek yogurt and eggs until smooth, then fold into the dry ingredients.
  4. Stir in the spinach, chives, and cheddar cheese until well combined.
  5. Divide the batter among the muffin cups and sprinkle the additional cheddar cheese on top.
  6. Bake for 20–22 minutes until golden brown and a toothpick inserted comes out clean.
