Prep and Cook
- In a medium bowl, whisk together mayonnaise, relish, sugar, mustard, and vinegar. Season with salt and pepper, then set aside.
- Dice ham and cube cheddar cheese. Mince onion and chop bell pepper. If using, finely chop parsley.
- In a large pot, bring salted water to a boil. Add bow tie pasta and cook according to package instructions, about 9-11 minutes. Drain and set aside to cool.
- Rinse the cooked pasta under cold water for 1-2 minutes to stop cooking and cool it down.
- Combine the cooled pasta with ham, cheddar, onion, peas, bell pepper, and parsley. Gently fold together.
- Pour the dressing over the pasta mixture and toss gently to coat.
- Refrigerate for at least 1 hour before serving to allow flavors to meld.
