Step‑by‑Step Instructions
  1. Prepare the crust by combining all-purpose flour, old-fashioned oats, salt, and brown sugar until evenly blended. Cut in cold butter until the mixture becomes crumbly, reserving ¾ cup for topping.
  2. Press half of the prepared crust mixture into the bottom of a lined baking dish and bake at 350°F (175°C) for 15 minutes until lightly golden.
  3. Prepare the filling by simmering chopped apricots, honey, vanilla extract, lemon juice, ground cinnamon, and a splash of water in a saucepan for 10-12 minutes until thickened.
  4. Spread the thickened apricot filling evenly over the cooled crust. Sprinkle with the reserved crumb mixture.
  5. Return to the oven and bake for an additional 20-25 minutes until the topping is golden brown.
  6. Allow cooling completely before slicing into squares or rectangles for serving.
