Step-by-Step Instructions for Almond Sweet Rolls
  1. In a stand mixer, combine 2 cups of flour, granulated sugar, yeast, and salt. Heat 1 cup of milk and 4 tablespoons of butter until melted. Gradually mix warm milk and melted butter into dry ingredients. Beat in 1 large egg and extracts. Slowly add remaining flour, kneading until smooth and elastic, about 5–8 minutes. Let rise for 1 hour or until doubled.
  2. Prepare almond filling by combining 4 tablespoons of softened butter, 1 cup of almond meal, ½ cup of granulated sugar, 1 large egg, and extracts in a mixing bowl. Mix until smooth and set aside.
  3. Once dough has risen, punch down and roll out on a floured surface into a rectangle, about ¼ inch thick. Spread almond filling evenly, leaving a border. Roll tightly and cut into 12 pieces. Arrange in greased baking dish, cover, and rise for another hour.
  4. Preheat oven to 350°F (175°C). Bake rolls for about 30 minutes or until golden brown. Allow to cool slightly in the pan.
  5. Beat together 4 ounces of softened cream cheese and 4 tablespoons of softened butter until creamy. Gradually add 2 cups of powdered sugar, mixing until smooth. Stir in almond extract and vanilla extract. Spread frosting over warm rolls and garnish with slivered almonds.
