Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, whisk the eggs, milk, and vegetable oil together until smooth and creamy.
  4. Gradually pour the wet ingredients into the dry mixture, gently folding them together until you have a smooth batter.
  5. Fill the cupcake liners about two-thirds full with the batter and bake for 18-20 minutes.
  6. While cupcakes cool, whip mascarpone cheese with espresso until light and fluffy.
  7. Once cool, cut off the tops of the cupcakes, scoop out a bit of the center, and fill with mascarpone mixture.
  8. Dust the tops with cocoa powder and serve on a platter.
