  • Shallow dish
  • Baking Dish

Method

Mix Cream
  1. In a large mixing bowl, combine mascarpone cheese and heavy cream. Using an electric mixer, beat the mixture on medium speed for 2-3 minutes until it's fluffy and holds soft peaks.
Add Flavors
  1. Incorporate the amaretto liqueur, cherry juice, and optional vanilla extract into the mascarpone mixture. Beat for an additional 1-2 minutes until everything is evenly blended and smooth.

Fold in Cherries
  1. Gently fold in the chopped fresh cherries into the mascarpone mixture.
Prepare Soaking Mixture
  1. In a shallow dish, combine amaretto liqueur and cherry juice, mixing well.
Dip Ladyfingers
  1. Quickly dip each ladyfinger into the soaking liquid on both sides, ensuring they are moist but not overly soggy.
Layer Ingredients
  1. Spread half of the mascarpone cream mixture over the ladyfingers, then layer another set of dipped ladyfingers on top, followed by the remaining mascarpone cream.
Chill
  1. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours.
Finish and Serve
  1. Dust the top with unsweetened cocoa powder and sprinkle dark chocolate shavings over the top.
