  • 8 oz Cream Cheese Room temperature
  • 15 oz Ricotta Cheese Lightly blended
  • 3/4 cup Granulated Sugar
  • 2 large Eggs Room temperature
  • 1 teaspoon Vanilla Extract Use pure vanilla
  • 1/2 cup Mini Chocolate Chips Do not substitute
Crust
  • 1 1/2 cups Graham Cracker Crumbs For gluten-free, use almond flour
  • 1/2 cup Melted Butter Should not be hot

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs and granulated sugar. Add melted butter and mix until crumbly. Press into the bottom of a lined 9x9-inch baking pan.
  3. In a separate bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time until combined.
  4. Fold in ricotta and chocolate chips gently.
  5. Pour the filling over the prepared crust and bake for 40-45 minutes until set with a slight jiggle in the center.
  6. Turn off the oven, leave the door ajar, and let cool for an hour. Refrigerate for at least 4 hours before slicing.
