Ingredients

  • 1 lb Ground Beef can substitute with ground turkey
  • 12 oz Kielbasa Sausage turkey kielbasa is a lighter alternative
For the Vegetables
  • 1 medium Yellow Onion can use red onion for a different taste
  • 3-4 cloves Garlic Cloves can substitute with garlic powder
  • 3-4 medium Gold Potatoes sweet potatoes can be substituted
  • 1 can Pinto Beans black beans are a good substitute
  • 1 can Whole Kernel Corn frozen corn can be used
  • 1 can Diced Tomatoes fresh tomatoes can be used if in season
  • 1 can Rotel adjust type for milder flavor if desired
  • 1 bag Frozen Mixed Vegetables or use fresh vegetables
For the Broth and Seasoning
  • 4 cups Beef Broth vegetable broth is a vegetarian substitute
  • 1 tbsp Brown Sugar omit for a low-sugar option
  • 1 tbsp Smoked Paprika regular paprika can be used for less smoke
  • 1 tbsp Onion Powder fresh chopped onion can replace it
  • 1 tbsp Kosher Salt adjust to preference
  • 1 tsp Ground Black Pepper adjust to preference
For Garnish
  • 2 tbsp Freshly Chopped Parsley omit if unavailable

Preparation
  1. Begin by dicing the yellow onion and mincing the garlic cloves. Peel and chop the gold potatoes into bite-sized pieces, and slice the kielbasa sausage into half-moons.
Combine Ingredients
  1. In the Crockpot, layer the ground beef, sliced kielbasa, diced onion, minced garlic, chopped potatoes, and pinto beans. Then add the whole kernel corn, diced tomatoes, and Rotel.
  2. Finally, toss in the frozen mixed vegetables.
Add Broth and Seasonings
  1. Pour in enough beef broth to cover the ingredients and stir to combine. Sprinkle in the brown sugar, smoked paprika, onion powder, kosher salt, and ground black pepper.
Cook
  1. Cover the Crockpot and set it to cook on low for 8 hours.
Serve and Garnish
  1. Once cooking time is complete, ladle the stew into bowls and garnish each with freshly chopped parsley.
