  1. Peel and wash the starchy potatoes. Grate half of them and mash the other half until smooth.
  2. In a bowl, combine mashed potatoes, grated potatoes, gluten-free flour, milk, egg, and salt. Stir until cohesive.
  3. Heat a frying pan over medium heat with oil or butter for about 2 minutes.
  4. Spoon about a quarter cup of batter into the pan for each pancake. Flatten to half an inch thick and cook for 3-4 minutes until golden, then flip.
  5. Cook the other side for another 3-4 minutes. Transfer to a plate lined with paper towels, serve warm.
