Step-by-Step Instructions for Crispy Smashed Potatoes
  1. Fill a large pot with water and add a pinch of salt. Bring to a rolling boil.
  2. Carefully add the starchy potatoes and boil for 15–20 minutes until fork-tender.
  3. Drain the potatoes and let them steam-dry in a colander for 5 minutes.
  4. Place the potatoes on a greased baking sheet and gently smash each potato to about ½ inch thick.
  5. Drizzle with olive oil and generously sprinkle with salt.
  6. Bake at 400°F (204°C) for 40 minutes, flipping halfway through.
  7. Prepare tahini sauce by mixing tahini, lemon juice, garlic powder, salt, and water until smooth.
  8. Once done, drizzle with tahini sauce and sprinkle with fresh herbs before serving.
