Preparation Steps
- Preheat your oven to 430°F (220°C) or 400°F (200°C) for fan-forced settings.
- Take the whole chicken, ensuring it's at room temperature, and pat dry with paper towels.
- In a mixing bowl, combine melted butter, olive oil, optional white wine, and lemon juice. Whisk until blended.
- Brush the garlic herb butter mixture all over the chicken and season generously with salt and pepper.
- Rub minced garlic over the chicken and place the halved garlic head and rosemary into the cavity.
- Tie the chicken legs together with kitchen twine and place it in the oven.
- Roast for about 1 hour and 15–20 minutes, basting with pan juices halfway through.
- To crisp the skin, turn on the broiler for 2–3 minutes, watching closely to prevent burning.
- Remove from the oven and let the chicken rest for 10 minutes before carving.
