- Cut fresh mozzarella cheese into sticks approximately 1/2 inch thick and 3 inches long. Place on a baking sheet and freeze for at least 30 minutes.
- Create a dredging station with shallow dishes: one with flour, one with beaten eggs, and another with the panko breadcrumbs mixed with Italian herbs and smoked paprika.
- Dredge each stick in flour, dip into beaten eggs, and roll in the panko mixture. Repeat for all sticks.
- Heat vegetable oil in a deep fryer or heavy-bottomed pot until it reaches 180°C (350°F).
- Carefully add the coated mozzarella sticks to hot oil in small batches, frying for 2-3 minutes until golden brown and cheese starts to melt.
- Remove fried mozzarella sticks using a slotted spoon and place on paper towels to absorb excess oil. Serve warm with dipping sauces.
