Equipment

  • Deep fryer
  • Shallow Dishes
  • slotted spoon

Method

Step-by-Step Instructions
  1. Cut fresh mozzarella cheese into sticks approximately 1/2 inch thick and 3 inches long. Place on a baking sheet and freeze for at least 30 minutes.
  2. Create a dredging station with shallow dishes: one with flour, one with beaten eggs, and another with the panko breadcrumbs mixed with Italian herbs and smoked paprika.
  3. Dredge each stick in flour, dip into beaten eggs, and roll in the panko mixture. Repeat for all sticks.
  4. Heat vegetable oil in a deep fryer or heavy-bottomed pot until it reaches 180°C (350°F).
  5. Carefully add the coated mozzarella sticks to hot oil in small batches, frying for 2-3 minutes until golden brown and cheese starts to melt.
  6. Remove fried mozzarella sticks using a slotted spoon and place on paper towels to absorb excess oil. Serve warm with dipping sauces.
