Preparation Steps
- Begin by pressing your extra firm tofu for 15 minutes to remove excess moisture. Cut the tofu into 1-inch cubes and toss them in a bowl with cornstarch and a pinch of salt until evenly coated.
- In a non-stick skillet, heat a couple of tablespoons of neutral oil over medium-high heat. Add the cornstarch-coated tofu cubes to the skillet and fry for about 3-4 minutes on each side.
- While the tofu is frying, whisk together the glaze ingredients: honey (or agave syrup), soy sauce, minced garlic, grated ginger, and rice vinegar in a separate bowl.
- Once the tofu is crispy, pour the glaze over it in the skillet and stir gently to coat. Cook for an additional 2-3 minutes until the sauce thickens.
- Prepare serving dishes with a bed of steamed rice, spoon the sticky tofu over it, and garnish with sesame seeds and sliced scallions.

Notes
Press tofu well for maximum crispiness. Coat evenly in cornstarch and avoid overcrowding when frying. Store leftovers in an airtight container in the fridge for up to 4 days.
