Ingredients

For the Breading
  • 1 pound Fresh or thawed shrimp peeled and deveined
  • 1 cup Unsweetened coconut flakes
  • 1 large Egg beaten; for vegan option, use flax egg
  • 1/2 cup All-purpose flour or gluten-free flour
  • to taste Salt and pepper for seasoning

Equipment

  • frying pan
  • shallow bowls
  • Tongs
  • Paper towels

Method

Step-by-Step Instructions
  1. Begin by rinsing the shrimp under cold water to cleanse them. Then, carefully devein and shell the shrimp, ensuring they are fully cleaned. Pat them dry with paper towels to remove excess moisture, as this will help the coating stick better later. Set the prepared shrimp aside while you set up your breading station.
  2. Next, create a simple breading station by arranging three shallow bowls. In the first bowl, add flour, seasoning it with salt and pepper to taste. In the second bowl, crack an egg and beat it until well combined. In the third bowl, place the unsweetened coconut flakes. Dredge each shrimp in flour, dip it into the egg, and then coat it generously with coconut flakes.
  3. In a large frying pan, pour enough oil to reach about 1/2 inch in depth. Place the pan over medium-high heat and let the oil heat up until it shimmers, which typically takes about 4-5 minutes.
  4. Carefully place the breaded shrimp into the hot oil in batches, avoiding overcrowding the pan. Fry each batch for about 2-3 minutes per side, or until they reach a golden brown color.
  5. Once the shrimp are golden and crispy, transfer them to a plate lined with paper towels to drain any excess oil. Allow them to rest for a minute or two, then serve hot with your favorite dipping sauce.
