Preparation
- Drain the extra-firm tofu to remove excess moisture, then wrap it in a clean kitchen towel and press it for about 15 minutes.
- Cut the tofu into bite-sized cubes.
- In a bowl, toss the tofu cubes with buffalo sauce and melted vegan butter until thoroughly coated.
- Preheat the air fryer to 400°F (200°C). Arrange the tofu in a single layer in the air fryer basket and cook for about 12 minutes, shaking halfway through.
- In a large bowl, add chopped kale, drizzle with Caesar dressing, and toss well to coat.
- Once the tofu is air-fried, carefully place it on top of the dressed kale and add croutons if desired.

Notes
Pressing tofu eliminates moisture for better crispiness. Leftover tofu can be stored in an airtight container for up to 3 days.
