Step-by-Step Instructions
  1. Boil the Potatoes: In a large pot, bring salted water to a boil. Add baby potatoes and cook for 15-20 minutes until fork-tender. Drain and cool.
  2. Prepare the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Smash the Potatoes: Place each potato on the baking sheet and flatten to about ½-inch thick.
  4. Mix the Seasoning: In a small bowl, combine olive oil, melted butter, minced garlic, salt, black pepper, smoked paprika, and oregano.
  5. Brush the Potatoes: Generously coat each smashed potato with the seasoning mixture.
  6. Add the Cheese: Sprinkle grated Parmesan cheese over each potato.
  7. Bake the Potatoes: Bake for 25-30 minutes until golden brown. Broil for 2-3 minutes for extra crunch, watching carefully.
