- Wash and peel the Russet potatoes if desired. Cut them into ¼–⅓ inch matchsticks.
- Soak the cut potatoes in a bowl of cold water for 25–30 minutes.
- Drain and pat the fries dry with kitchen towels.
- Drizzle fries with olive oil and sprinkle with salt, garlic powder, smoked paprika, and black pepper. Toss until evenly coated.
- Preheat your air fryer to 380°F for about 3–5 minutes.
- Add seasoned fries in a single layer to the air fryer and cook for 14–18 minutes, tossing halfway through.
- Remove fries when golden brown and toss with an extra pinch of salt before serving.
