  • 1 bunch Radishes choose vibrant red radishes
  • 1/4 cup Parsley finely chopped, tough stems discarded
  • 1 medium Lemon Juice freshly squeezed
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 1 teaspoon Kosher Salt or sea salt
  • to taste Black Pepper preferably freshly ground

Method
 

Preparation Steps
  1. Rinse the radishes under cool water, chop off the green tops and root ends, then slice into half-inch cubes.
  2. Chop the parsley finely and combine with cubed radishes in a medium serving bowl.
  3. Squeeze lemon juice over the mixture, add salt and pepper to taste, and toss gently.
  4. Drizzle olive oil over the salad and toss again to coat evenly.
  5. Taste and adjust seasoning with more lemon juice, salt, or pepper as desired.
  6. Serve immediately or chill for up to 30 minutes before serving.
