Step-by-Step Instructions
  1. Step 1: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 finely chopped onion, 1 grated carrot, and 1 finely diced celery stalk. Sauté for 5-7 minutes until the vegetables are softened and fragrant.
  2. Step 2: Increase the heat to medium-high and add 1 pound of ground meat. Cook, breaking the meat apart with a wooden spoon, until browned and no longer pink, about 5-7 minutes.
  3. Step 3: Pour in 1 cup of dry white wine, scraping up any browned bits. Allow to cook for 3-5 minutes, until reduced by half.
  4. Step 4: Stir in 1 cup of milk or heavy cream. Simmer while stirring frequently. Add a pinch of freshly grated nutmeg, followed by salt and pepper to taste.
  5. Step 5: Reduce heat to low and let simmer uncovered for 30-45 minutes, stirring occasionally.
  6. Step 6: Once thickened, stir in 1/2 cup of freshly grated Parmesan cheese until melted.
