- In a heavy pot, heat over medium heat, adding your crumbled chorizo. Sauté for about 5 minutes or until browned, then drain excess fat.
 - Add chopped onions to the pot with the chorizo and sauté for about 3 minutes. Stir in minced garlic and chipotle peppers, cooking for 2 more minutes.
 - Pour in your choice of broth, followed by pumpkin puree, cumin, salt, and pepper. Stir to combine and bring to a gentle simmer for 10 minutes.
 - Remove from heat and slowly stir in the cream. Blend part of the soup with an immersion blender if a smoother texture is desired.
 - Ladle the soup into bowls, topping with roasted pumpkin seeds and sliced green onions.
