Ingredients
  

For the Pasta
  • 8 oz Farfalle (Bowtie Pasta) can be swapped with penne or macaroni shells
For the Chicken
  • 1 lbs Chicken Breast boneless and skinless
  • 2 tbsp Cajun Seasoning adjust to taste
  • 2 tbsp Avocado Oil can substitute with olive oil or canola
For the Vegetables
  • 1 medium Orange Bell Pepper diced
  • 1 medium Zucchini thinly sliced
  • 1 medium Jalapeño adjust according to heat tolerance
  • 1 medium Tomato diced or substitute with cherry tomatoes
  • 2 stalks Green Onion chopped
For the Sauce
  • 2 tbsp Tomato Paste
  • 2 cloves Garlic minced
  • 1 tsp Crushed Red Pepper optional, adjust to taste
  • 1 cup Half and Half or heavy cream
  • 1/2 cup Parmesan Cheese freshly grated
For Final Seasoning
  • to taste Salt
  • to taste Black Pepper

Method
 

Step-by-Step Instructions
  1. Season the boneless, skinless chicken breasts generously with Cajun seasoning and let it rest for 10-15 minutes.
  2. Heat avocado oil in a large non-stick pan over medium heat. Sear the chicken for 4-5 minutes on each side until golden.
  3. Add sliced zucchini, diced orange bell pepper, and chopped jalapeño to the pan. Sauté for 6-7 minutes.
  4. Stir in chopped tomatoes, sliced green onions, and tomato paste. Season with salt, cooking for an additional 5 minutes.
  5. Boil salted water in a pot and cook the farfalle pasta according to package instructions until al dente.
  6. Add minced garlic and crushed red pepper to the vegetable mixture. Sauté for 1 minute, then pour in half and half and simmer to thicken for 6-7 minutes.
  7. Combine the drained pasta with the creamy sauce and toss evenly. Add reserved pasta water if needed, mixing in Parmesan cheese until melted.
  8. Serve the creamy pasta garnished with additional green onions, crushed red pepper, and Parmesan cheese.

Notes
