  • 2 tablespoons fish sauce use soy sauce for a vegetarian option
  • 2 tablespoons vegetable oil high-heat oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger freshly grated
  • 1 medium red bell pepper sliced
  • 1 tablespoon brown sugar coconut sugar is a great alternative
  • 1 tablespoon lime juice fresh juice

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium heat.
  2. Sauté minced garlic and freshly grated ginger until fragrant and golden.
  3. Stir in red Thai curry paste and cook until bubbling gently.
  4. Pour in coconut milk and bring to a low simmer.
  5. Add fish sauce and brown sugar, stir until dissolved and simmer for 2 minutes.
  6. Add sliced red bell pepper and cook for 3-4 minutes.
  7. Gently fold in shrimp and cook until pink and opaque.
  8. Remove from heat, stir in lime juice, adjust seasoning, and serve.
  9. Serve over jasmine rice, garnished with fresh herbs and lime wedges.
