- Brew 2 cups of strong espresso or coffee and allow it to cool to room temperature for about 15-20 minutes.
- In a large mixing bowl, combine mascarpone cheese, granulated sugar, brown sugar, kosher salt, and pumpkin pie spice. Beat until smooth and creamy, then blend in pumpkin puree and heavy cream for 3-4 minutes until thick.
- Dip ladyfingers in cooled coffee for 1-2 seconds and arrange them in a single layer in a 13x9 inch dish.
- Spread half of the creamy pumpkin mixture over the first layer of coffee-soaked ladyfingers evenly.
- Repeat the dipping process and place another batch of ladyfingers on top of the first cream layer closely together.
- Spread the remaining creamy pumpkin mixture over the second layer of ladyfingers evenly.
- Cover with plastic wrap and refrigerate for at least 4 hours or ideally overnight to set.
- Before serving, dust with cocoa powder and slice into squares.
