Method
 

Step-by-Step Instructions
  1. Brew 2 cups of strong espresso or coffee and allow it to cool to room temperature for about 15-20 minutes.
  2. In a large mixing bowl, combine mascarpone cheese, granulated sugar, brown sugar, kosher salt, and pumpkin pie spice. Beat until smooth and creamy, then blend in pumpkin puree and heavy cream for 3-4 minutes until thick.
  3. Dip ladyfingers in cooled coffee for 1-2 seconds and arrange them in a single layer in a 13x9 inch dish.
  4. Spread half of the creamy pumpkin mixture over the first layer of coffee-soaked ladyfingers evenly.
  5. Repeat the dipping process and place another batch of ladyfingers on top of the first cream layer closely together.
  6. Spread the remaining creamy pumpkin mixture over the second layer of ladyfingers evenly.
  7. Cover with plastic wrap and refrigerate for at least 4 hours or ideally overnight to set.
  8. Before serving, dust with cocoa powder and slice into squares.
