Step-by-Step Instructions
  1. In a large pot, warm 1 tablespoon of olive oil over medium heat until shimmering.
  2. Add the Italian sausage to the pot, breaking it apart with a wooden spoon. Cook for about 5 to 7 minutes until browned.
  3. Once the sausage is browned, add chopped onion and minced garlic. Sauté for 2 to 3 minutes until onion is softened.
  4. Pour in the chicken broth and diced tomatoes with their juices. Stir in the Italian seasoning and simmer for 3 to 5 minutes.
  5. Add the ditalini pasta to the pot, stirring to combine. Cook according to package instructions, about 8 to 10 minutes.
  6. Once the pasta is cooked, reduce heat to medium-low. Mix in heavy cream, Parmesan cheese, and fresh spinach. Cook for another 2 to 3 minutes.
