- In a small dish, sprinkle unflavored powdered gelatin over the water and let it sit for about 5 minutes.
- In a medium saucepan, combine heavy cream, whole milk, and honey. Heat over medium, stirring until small bubbles form. Remove from heat.
- Whisk the bloomed gelatin into the warm cream mixture until completely dissolved.
- Pour the creamy panna cotta mixture into ramekins. Cover with plastic wrap and chill for at least 4 to 6 hours.
- Wash and slice strawberries. Mix them with honey or maple syrup and let sit in the fridge for 30-60 minutes.
- Run a butter knife around the edge of each ramekin to release the panna cotta. Invert onto plates and top with macerated strawberries.
