- Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper. Set aside.
- Heat avocado oil in a cast iron skillet over medium-high heat. Place salmon fillets skin-side up and cook for 4-6 minutes until golden brown.
- Flip the salmon fillets so they are skin-side down and cook for an additional 3-5 minutes until the skin is crispy and salmon is cooked through.
- Reduce heat to medium and pour in heavy cream, lemon juice, and minced garlic. Whisk together and simmer for 3-5 minutes until sauce thickens.
- Taste and adjust seasoning with additional salt and pepper if needed. Stir in chopped parsley and serve sauce over salmon.
