Step-by-Step Instructions
  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add 1 pound of ground sausage and cook for about 5–7 minutes until browned and crispy.
  2. Reduce the heat to medium and add 3 minced garlic cloves. Sauté for about 30 seconds until fragrant.
  3. Stir in 2 cups of fresh spinach and 1/2 cup of chopped sun-dried tomatoes. Cook for 2–3 minutes until the spinach has wilted.
  4. Pour in 1 cup of heavy cream and add your preferred seasonings. Let simmer for 3–5 minutes until the sauce thickens.
  5. Remove from heat and serve immediately over zucchini noodles or cauliflower rice.
