  • 1/2 cup Parmesan Cheese Nutritional yeast as vegan option

Classic Mac and Cheese
  • 8 oz Elbow Macaroni
  • 2 tbsp Butter Margarine for dairy-free
  • 1 tbsp All-Purpose Flour Cornstarch as gluten-free substitute
  • 1 cup Milk Any milk variety
  • 2 cups Shredded Cheddar Cheese Freshly shredded preferred
  • 1 tbsp Dry Mustard Dijon mustard as substitute
  • 1/4 tsp Ground Nutmeg Optional for warmth
  • 1/2 cup Breadcrumbs Optional for crispy topping

Method
 

Cooking Instructions
  1. Cook the elbow macaroni in a large pot of salted boiling water for 7-8 minutes until al dente. Drain and set aside.
  2. For High Protein Mac and Cheese, heat olive oil in a saucepan, or melt butter for Classic. Sauté minced garlic for 1-2 minutes.
  3. For High Protein, add milk, cottage cheese, and Greek yogurt to the saucepan, heating until a gentle simmer. For Classic, whisk in warm milk to the butter-flour roux, cooking until thick.
  4. Blend in shredded cheddar cheese for both versions, adding parmesan for High Protein, until melted and smooth.
  5. Combine macaroni with cheese sauce, ensuring each piece is coated. Season High Protein with salt and pepper.
  6. For baked Classic, transfer to a greased baking dish, sprinkle breadcrumbs, and bake at 375°F (190°C) for 20-25 minutes.
