- Cook the elbow macaroni in a large pot of salted boiling water for 7-8 minutes until al dente. Drain and set aside.
- For High Protein Mac and Cheese, heat olive oil in a saucepan, or melt butter for Classic. Sauté minced garlic for 1-2 minutes.
- For High Protein, add milk, cottage cheese, and Greek yogurt to the saucepan, heating until a gentle simmer. For Classic, whisk in warm milk to the butter-flour roux, cooking until thick.
- Blend in shredded cheddar cheese for both versions, adding parmesan for High Protein, until melted and smooth.
- Combine macaroni with cheese sauce, ensuring each piece is coated. Season High Protein with salt and pepper.
- For baked Classic, transfer to a greased baking dish, sprinkle breadcrumbs, and bake at 375°F (190°C) for 20-25 minutes.
