Cooking Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced medium onion, 3 minced garlic cloves, and 2 diced celery ribs. Sauté for 4-5 minutes until onions are translucent.
  2. Gradually sprinkle in ⅓ cup of all-purpose flour while stirring continuously. Mix until combined and forms a roux.
  3. Slowly pour in 5 cups of chicken broth, whisking constantly. Bring to a gentle boil, then reduce to a simmer for 3-4 minutes.
  4. Add 1 large diced chicken breast, 1 teaspoon of Italian seasoning, and ¼ teaspoon of dried thyme. Simmer for 5-7 minutes until chicken is cooked.
  5. Add a 16-ounce package of gnocchi to the pot and simmer for 3-4 minutes until tender.
  6. Fold in 1 cup of shredded carrots, 1 cup of spinach leaves, and 1 cup of heavy cream. Cook on low for 1-2 minutes until spinach wilts.
  7. Adjust seasoning with salt and pepper. Stir well to balance flavors.
  8. Ladle the soup into bowls and serve hot with crusty bread and Parmesan cheese.
