- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced medium onion, 3 minced garlic cloves, and 2 diced celery ribs. Sauté for 4-5 minutes until onions are translucent.
- Gradually sprinkle in ⅓ cup of all-purpose flour while stirring continuously. Mix until combined and forms a roux.
- Slowly pour in 5 cups of chicken broth, whisking constantly. Bring to a gentle boil, then reduce to a simmer for 3-4 minutes.
- Add 1 large diced chicken breast, 1 teaspoon of Italian seasoning, and ¼ teaspoon of dried thyme. Simmer for 5-7 minutes until chicken is cooked.
- Add a 16-ounce package of gnocchi to the pot and simmer for 3-4 minutes until tender.
- Fold in 1 cup of shredded carrots, 1 cup of spinach leaves, and 1 cup of heavy cream. Cook on low for 1-2 minutes until spinach wilts.
- Adjust seasoning with salt and pepper. Stir well to balance flavors.
- Ladle the soup into bowls and serve hot with crusty bread and Parmesan cheese.
