  • 8 ounces medium pasta shells or elbow macaroni or penne
For the Sauce
  • 2 tablespoons unsalted butter or olive oil
  • 2 cloves garlic, minced fresh or powdered garlic
  • 1 shallot, minced or onion
  • 2 tablespoons all-purpose flour or gluten-free flour
  • 1 ⅓ cups whole milk or 2% or unsweetened almond milk
  • 1 cup half and half or a mix of heavy cream and milk
  • 1 teaspoon Dijon mustard or yellow mustard
  • Kosher salt and freshly ground black pepper to taste
For the Veggies
  • 3 cups chopped broccoli florets or any green veggie like spinach
For the Cheese
  • 6 ounces extra-sharp cheddar cheese, grated or Gruyère or mozzarella

Method
 

Step-by-Step Instructions
  1. In a large pot of boiling salted water, add the pasta shells and cook according to the package instructions, usually around 8-10 minutes. Drain and set aside.
  2. In a large cast iron skillet over medium-high heat, melt the butter. Add minced garlic and shallot, sauté for about 2 minutes until fragrant.
  3. Whisk in the flour into the buttery mixture, cooking for about 1 minute. Gradually pour in the whole milk and half and half while whisking to prevent lumps. Cook until the sauce thickens, about 3-4 minutes.
  4. Add the chopped broccoli florets to the sauce and cook for an additional 3-4 minutes until the broccoli is tender.
  5. Gently fold in the cooked pasta and grated cheddar cheese until combined and the cheese melts, about another 3-4 minutes.
  6. Remove from heat and serve immediately.

Notes

Use freshly grated cheese for better melting and consistency. Adjust the thickness with more milk if needed. Parboil broccoli for better texture.
