- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface to about 1/4 inch thickness.
- Spread a generous layer of cranberry sauce over the puff pastry, leaving a 1-inch border.
- Layer slices of brie cheese over the cranberry sauce and sprinkle fresh thyme leaves on top.
- Cut the pastry into 8 equal strips, fold each in half, twist, and pinch the ends to seal.
- Brush the tops of each twist with egg wash and place on the prepared baking sheet.
- Bake for 18–22 minutes until golden brown and puffed up.
- Remove from the oven, allow to cool slightly, and drizzle with honey if desired before serving.
