Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. Scrub the sweet potatoes under cool running water and pierce them several times with a fork. Rub lightly with olive oil and sprinkle with salt.
  3. Place the sweet potatoes on the baking sheet and roast for 40-45 minutes until tender.
  4. Heat a skillet over medium heat and melt the butter. Add diced apples and cook for 2-10 minutes until caramelized.
  5. Add cranberries, brown sugar, cinnamon, and nutmeg to the skillet and cook for about 5 minutes.
  6. Remove sweet potatoes from the oven, split lengthwise, and fluff the insides with a fork.
  7. Spoon the apple and cranberry mixture into the fluffed sweet potatoes.
  8. Return stuffed sweet potatoes to the oven for an additional 10 minutes.
  9. Let rest for a few minutes before serving and garnish with additional pecans or cinnamon if desired.
