- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat, add ground beef, and cook until browned (5-7 minutes). Drain excess fat.
- Add chopped onion and minced garlic to skillet; sauté for 3-4 minutes until onion is translucent.
- Spread the beef mixture evenly at the bottom of the greased baking dish.
- Layer thinly sliced potatoes on top of beef, overlapping slightly. Sprinkle with salt, pepper, and Italian seasoning.
- Sprinkle cheddar and parmesan cheeses over the potatoes and pour beef broth around the edges of the casserole.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden.
