Ingredients
  

For the Shrimp
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons oil for searing
  • to taste salt
  • to taste pepper
For the Sauce
  • 2 tablespoons olive oil can be swapped with vegetable oil
  • 4 cloves garlic fresh and minced
  • 1 teaspoon garlic powder adjust if using fresh garlic
  • 4 tablespoons unsalted butter can use salted butter, adjust salt accordingly
  • 1 tablespoon Dijon mustard yellow mustard can be used as a substitute
For Flavor
  • 1 teaspoon paprika smoked paprika is recommended
  • 1 teaspoon smoked paprika or regular paprika
  • 1/4 teaspoon red chili flakes adjust for spice tolerance
  • 1 teaspoon oregano dried oregano is fine
  • 1/4 cup parsley fresh and chopped
  • 1 lemon lemon zest and juice

Method
 

Step-by-Step Instructions
  1. Start by rinsing and thoroughly drying the large shrimp. Butterfly each shrimp by slicing along the back.
  2. In a mixing bowl, toss the shrimp with oil, salt, pepper, paprika, and garlic powder to coat evenly.
  3. In a large skillet, heat 2 tablespoons of oil over medium-high heat. Place the seasoned shrimp in the skillet and cook for 1-2 minutes on each side until pink and opaque.
  4. Transfer the shrimp to a plate and keep warm. Lower the heat and add more oil, minced garlic, smoked paprika, red chili flakes, and oregano to the skillet.
  5. Sauté for about 30 seconds until garlic is fragrant. Stir in the butter and Dijon mustard until melted and smooth.
  6. Remove from heat and toss the cooked shrimp back into the pan with parsley, lemon zest, and juice, adjusting seasoning as needed before serving.
  7. Serve hot, garnished with additional parsley, over rice or with crusty bread.
